Easy No-Bake Strawberry Vanilla Mousse Pie (with Oreo Crust)

If you’re looking for a simple, crowd-pleasing dessert that looks fancy but takes minimal effort, this Strawberry Vanilla Mousse Pie is it! Made with a buttery Oreo crust and a light, fluffy mousse using instant French vanilla pudding, this recipe is practically foolproof — no baking skills required.

It’s one of those desserts you’ll come back to again and again because it’s just so easy and so loved. The smooth vanilla mousse pairs perfectly with the crunchy Oreo base and juicy strawberries on top. It’s the kind of treat that disappears fast at gatherings (you’ve been warned!).

Tips for Success:

  • Use very cold heavy cream – this is key to getting that thick, mousse-like texture.

  • Don’t overbeat the mousse mixture — stop as soon as it forms soft, fluffy peaks to avoid a grainy texture.

  • The crust can be made baked or no-bake. If skipping the oven, chill it in the fridge for 1 hour before adding the filling.

  • Let the pie chill fully before slicing — the mousse sets better and cuts more cleanly.

  • You can easily switch up the fruit based on what’s in season or what you love!

No-Bake Strawberry Vanilla Mousse Pie (with Oreo Crust)

If you're looking for a simple, crowd-pleasing dessert that looks fancy but takes minimal effort, this Strawberry Vanilla Mousse Pie is it! Made with a buttery Oreo crust and a light, fluffy mousse using instant French vanilla pudding.

Ingredients

Oreo Crust

  • 25 oreo cookies, I used the chocolate filled oreos
  • 4 tbsp. butter, melted

Whipped Vanilla Mousse Filling

  • 1 1/2 cups cold heavy whipping cream (full fat)
  • 1 tsp. vanilla extract
  • 2 tbsp. Instant jello-o pudding & pie filling mix. (French vanilla flavor)
  • 12-15 fresh strawberries (washed and dry)

Instructions

Make Oreo Crust

  • Preheat oven to 325°F (160°C).
  • Crush Oreos in a food processor until finely ground. (Pause and scrape down sides if needed.) Add melted butter, pulse again to combine. The mix will be thick and sticky.
  • Grease an 8–9-inch pie dish lightly with cooking spray. Press the cookie mixture into the bottom and up the sides of the dish. Use a flat-bottomed measuring cup for an even crust.
  • Bake for 7 minutes — no more! (Overbaking makes it too hard.) Cool completely on a wire rack before filling.

Make Whipped Vanilla Mousse

  • Chill your mixing bowl and beaters for 10 minutes (optional but helps cream whip better). Pour cold heavy cream into the bowl. Add vanilla extract and pudding mix. Mix slowly at first with a hand mixer to combine, then increase to medium-high. Beat until thick, light, and mousse-like (don't overbeat — stop when it's fluffy!).

Assemble

  • Spoon the whipped mousse filling into the cooled Oreo crust. Spread evenly. Slice strawberries in half or as desired. Arrange strawberries on top of the filling however you like — get creative!
  • Refrigerate the pie until ready to serve. The colder, the better!
