There’s something timeless and deeply comforting about a warm bowl of chicken soup—especially during the colder winter months. It’s the kind of meal that warms you from the inside out and instantly makes everything feel a little calmer. Made with tender chicken, aromatic herbs, sweet carrots, and soft egg noodles, it’s hearty without being heavy and perfect for making a big batch to enjoy throughout the week.
This version of chicken noodle soup is one I make often, especially when life feels busy and weekends are packed. Using a pre-bought rotisserie chicken and boxed chicken broth keeps things simple without sacrificing flavor. Sometimes getting a little help from premade ingredients is a smart choice—not a shortcut. It allows you to put a wholesome, homemade meal on the table with far less stress, which is a win in my book.

What Makes a Really Good Chicken Noodle Soup
- Start with a flavorful base – Sauté onions, carrots, and celery before adding broth to build depth from the very beginning.
- Use a good-quality broth – Since broth is the heart of the soup, a rich boxed broth or stock makes a big difference. I use low sodium broth and add salt to my taste.
- Season early and taste often – Broth strength varies, so adjusting salt and pepper as it cooks ensures balanced flavor.
- Tender, well-seasoned chicken – Rotisserie chicken adds richness, saves time, and keeps the soup juicy and flavorful.
- Don’t overcook the noodles – Add egg noodles toward the end so they stay tender, not mushy.
- Let it gently simmer – Even a short simmer allows flavors to meld and creates a more comforting, cohesive soup.
- Herbs matter – Dried herbs add warmth, while fresh herbs at the end bring brightness and aroma.
- Finish with freshness – A touch of fresh parsley or a squeeze of lemon can elevate the entire bowl.
STORAGE & REHEATING TIPS
This chicken noodle soup stores well in the refrigerator for 3–4 days. If you plan to store leftovers, keep the noodles separate to prevent them from soaking up too much broth. Reheat gently on the stovetop or in the microwave until warmed through. Soup can thicken as it sits in the fridge, add broth or water as needed.
This is the kind of recipe I come back to again and again—simple, comforting, and made with love. It’s proof that you don’t need complicated ingredients to make something truly special. And my favorite compliment of all? My son Luke took one bite and said it was better than Panera’s soup—which, in our house, is about as high of a review as it gets. That alone tells me this chicken noodle soup is a keeper. I hope you enjoy it!

Easy Chicken Noodle Soup with Rotisserie Chicken (Family Favorite)
Ingredients
Ingredients for Easy Chicken Noodle Soup
- 1 whole rotisserie chicken, meat shredded
- 2 tbsp olive oil
- 2 tbsp butter
- 1 medium onion, diced
- 1-2 medium carrots, diced
- 2 tsp fresh garlic, minced
Herbs & Seasoning
- 1 tsp dry rosemary, coarsely ground
- 1 tsp dry sage
- 1/2 tbsp dry thyme
- 1/2 tsp ground black pepper
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 2 tsp salt ((adjust to taste, especially if using low-sodium broth))
Liquids & Noodles
- 9 cups low-sodium chicken broth
- 2 cups water
- 2 cups dry egg noodles
Instructions
- In a large pot or Dutch oven, heat the olive oil and butter over medium heat. Add the diced onion, and sauté for about 4 minutes, until soft and translucent.
- Add garlic and carrots. Cook for about 5 minutes, stirring occasionally, until the carrots begin to soften and everything smells fragrant.
- Add the dried rosemary, sage, thyme, garlic and onion powder, salt, and black pepper. Stir and cook for about 30 seconds to allow the herbs to release their flavor.
- Add liquids, chicken, and noodles, pour in the chicken broth and water, then add the egg noodles and shredded rotisserie chicken. Stir everything together to combine.
- Cover the pot and increase the heat to bring the soup to a gentle boil, about 7 minutes.
- Reduce the heat back to medium. Keep the pot covered and let the soup simmer for about 12 minutes, or until the noodles are tender and the flavors have come together.
- Taste and adjust seasoning if needed. The soup will thicken from the starch of the noodles. You can adjust the consistency by adding water or more chicken stock. Serve hot and enjoy!
