EASY HOMEMADE CHICKEN RAMEN

    • PEACH GALETTE using puff pastry 

1 puff pastry, thawed 
3 large peaches, sliced 
1 tablespoon cornstarch 
2 tablespoons brown sugar 
2 tablespoons regular granulated sugar 
1 teaspoon vanilla extract 
1/2 teaspoon cinnamon 
1 teaspoon lemon juice 
1 egg whisked with 2 tablespoons water 
Powdered sugar for garnish is optional 

1. Preheat oven to 425 degrees F. Have a sheet tray and large piece of parchment paper ready. 
2. Thaw the puff pastry using instructions on packet. Once thaw keep it refrigerated wrapped in paper towel while working on peaches.
3. In medium bowl add the peaches, cornstarch, sugars, vanilla, cinnamon and lemon juice and mix well. If peaches not very sweet you can adjust the sugar. 
4. Place puff pastry on parchment paper. Lightly dust with flour and roll out but not too thin. Roll out enough to fold over the peaches. 
5. Arrange the peaches in a single layer leaving some dough border to fold over. Discard the extra juices. 
6. Gently fold the edges up and over the peaches. 
7. Brush the edges with egg wash and sprinkle some sugar.
8. Place on a baking sheet and bake about 30-35 minutes until crust is golden brown. 
9. Let it rest for about 10-15 minutes before serving. Sprinkle some powder sugar and serve with vanilla ice cream.

INGREDIENTS 
3-4 tablespoons oil 
1 medium onion, diced 
1 medium tomato, diced 
1/2 green bell pepper, diced 
4 eggs, whisked 
1/4 tsp garlic powder 
1/4 tsp onion powder 
1/4 tsp dry oregano 
1/2 tsp paprika 
1/2 tsp chipotle chili powder 
Hot sauce-I used chipotle hot sauce 
Fresh cilantro 
Small corn tortillas 

Use a medium size skillet. Over medium flame heat oil and add onions. Sauté until light brown and translucent. Add tomatoes and bell pepper, mix and cover for about 2-3 minutes until tomatoes are cooked down. Add the spices, mix well and continue cooking mixture is not watery. 

Add the whisked eggs. Slowly mix until eggs have fully cooked. Garnish with some fresh chopped cilantro. 

Warmup the tortillas on a flat griddle. Serve with hot sauce! 
This made about 6 tacos

I’ve got the perfect sheet pan homestyle dinner option today. This chicken is marinated in fresh garlic, cilantro, lemon juice, Worcestershire sauce, oil and spices and then oven-roasted. It’s roasted until the chicken thighs are moist on the inside and crispy seasoned skin on the outside. Accompanying green sauce is so easy to make with the fresh color and flavor from cilantro. It’s fresh, tangy with little heat from jalapeno pepper.
